Tatar okroshka.



Tatar hash is a cold soup made from fresh cucumbers, green onions, boiled eggs, boiled beef and kvass and katyk (tatar yogurt).

Ingredients:

  • 1.5 liters of kvass 
  • boiled beef- 400-500 g.
  • green onion- 250 g.
  • cucumbers- 250 g.
  • boiled eggs- 5 pcs.
  • katyk (or yogurt) - 500 g.
  • mustard -1-2 tablespoons 
  • dill ( greens) , salt, spices  to taste

Method of preparation:

  • Boiled egg yolks good rub with mustard (you can add a little sugar ). 
  • Mix it with bread kvass and refrigerate for several hours. 
  • Chop green onions and mash it with salt (1 teaspoon of salt ) that appeared juice. 
  • Cold boiled beef , cucumber , egg white cut into thin strips . 
  • 30 minutes before serving, mix all with cold kvass and put in the fridge for half an hour.
  • Finely add chopped greens. 
  • Katyk ( or yogurt ) served alone or put into a bowl .
